Meet Brian
The Capital Grille's Advanced Sommelier, Brian Phillips, is charged with
hand-selecting each new varietal that graces our award-winning wine list. An
Advanced Sommelier with the Court of Master Sommeliers and a Certified Wine
Educator from the Society of Wine Educators, Brian is currently pursuing the
Master Sommelier certification. To stay sharp, he continuously challenges
himself through Sommelier and service competitions as well as traveling the
globe in pursuit of exceptional wines while meeting the makers behind them.
Brian truly believes that he gains his greatest insights and rewards through
sharing his love for wine with others. His joy for sharing wine knowledge and
experiences makes him an incomparable wine expert for The Capital Grille. Follow

Moët & Chandon Impérial, Brut Champagne
The minerally undertow imparts a subtle, smoky note that blends with flavors of
dried pineapple, biscuit, salted almond and white peach. A balanced version with well-honed acidity.
Our recommended food pairing: Pair with our Fresh Oysters on the Half
Shell.
Brewer-Clifton, Sta. Rita Hills, Chardonnay
This classic chardonnay captures crisp citrus and honeydew notes kissed by subtle
oak and an elegant, full-bodied finish.
Our recommended food pairing: Enjoy this versatile wine with Jumbo Lump,
Crab Cocktail or Sea Scallops.
Mauritson ‘Loam,’ Rockpile, Sonoma County, Cabernet Sauvignon
A 100% cabernet sauvignon, this wine delivers a perfectly structured red that blends
dark fruit, cassis and supple tannins to create a perfectly balanced finish.
Our recommended food pairing: Pair with our Dry Aged Porterhouse or
Bone-In Kona Crusted Dry Aged NY Strip with Shallot Butter.
Joseph Phelps, Napa Valley, Cabernet Sauvignon
Hailed for expressive cherry, licorice and blackberry notes, a supple mouthfeel and
velvety finish.
Our recommended food pairing: Accompanied by our Porcini Rubbed Bone-In
Ribeye with 15-Year Aged Balsamic makes for an unbeatable pair.
Etude ‘Estate,’ Carneros, Sonoma County, Pinot Noir
Rich expanses of red cherry, wild strawberry and pomegranate brighten the palate
while layers of sandalwood and sassafras give this pinot intensity and depth. The
Etude is medium-bodied and smooth while remaining lively and uplifting.
Our recommended food pairing: Pairs well with Sushi-Grade Sesame Seared
Tuna with Gingered Rice.
Domaine Serene ‘Evenstad,’ Willamette Valley, Pinot Noir
This full-bodied wine exemplifies the earthy, complex ripe fruit characteristics of
great Oregon pinot noir.
Our recommended food pairing: Noted for great purity of fruit and
structure, it pairs exceptionally well with our Seared Citrus Glazed Salmon with
Marcona Almonds and Brown Butter.
Ceretto, Barolo, Piedmont, Nebbiolo
Complex layers are born from this barolo—immediate ripe fruit rushes in and then
gives way to reveal a more savory wine with dried raspberry and herb notes.

Lamb Rib Chops and Bone-In Ribeye.
Chappellet ‘Mountain Cuvée,’ Napa Valley, Proprietary Red
Aged in French oak, this medium-bodied proprietary blend balances ripe black cherry
and cassis with the gravity of well-integrated tannins and hints of clove and
vanilla.
Our recommended food pairing: Pairs well with our Dry Aged NY Strip Au
Poivre with Courvoisier Cream.
Opus One, Napa Valley, Proprietary Red
Genius brainchild of Robert Mondavi and Baron Philippe de Rothschild, this New World
wine is the apex of proprietary red, exuding opulence and class. Sought worldwide
for its bold character, depth of dark fruit and ultra-fine tannins.
Our recommended food pairing: Pair with our Gorgonzola and Truffle Crusted
Dry Aged Bone-In NY Strip.

A new pouring technology called Coravin gives us the great luxury of extracting one glass at a time without removing the cork or disturbing the wine. Hanzell Vineyards, Chardonnay, Sonoma Valley Flavor profile: Flavors and aromas of Bosc pear, green mango, lemon zest and jasmine mingle with scents reminiscent of brioche, anise and dusty slate.
DuMOL Wester Reach, Pinot Noir, Russian River Flavor profile: Classic coastal hi-toned aromas of Bing cherry, fresh strawberry jam, rose petal, complex grassy and herbal elements with anise and evergreen.
Château Corton Grancey, Corton Grand Cru, Burgundy Flavor profile: There is plenty of the classic Corton character present in the intensely earthy, ripe and attractively fresh combination of various red berry fruits and earthy minerals.
Casa Lapostolle, Clos Apalta, Colchagua Valley, Chile Flavor profile: A blend of 46% carménère, 30% cabernet sauvignon, 19% merlot and 5% cabernet franc. Made from biodynamically grown grapes. Pair this wine with a great dry aged steak and enjoy!
Château L’Évangile, Pomerol, Bordeaux Flavor profile: Dense, intense color with hints of violet. Powerful, lingering, expressive, very ripe, concentrated nose, with notes of morello cherries and black currants.
Morlet, Les Petits, Cabernet Sauvignon, Napa Valley Flavor profile: Displaying a very intense bouquet of black currant, candied red and black cherries and mocha, intermixed with hints of blond tobacco leaves and earthy notes of leather and toasted red pepper.
